Book Summary

Adults living in certain olive-growing areas of the Mediterranean Basin display high life expectancies and rates of chronic disease that are among the lowest in the world. These benefits are achieved despite socioeconomic indicators that are often much lower than those of more industrial nations in North America and Europe. Attention has focused on diet as the cardinal factor since food consumption patterns are closely tied to the incidence and severity of chronic debilitating diseases. The Mediterranean Diet: Constituents and Health Promotion explores in detail the relationship among the Mediterranean Diet, nutritional status, and disease and evaluates the nutritional practices that minimize or slow the incidence and progress of major diseases, especially heart disease and cancer. During the past ten years the Mediterranean Diet has been the subject of constant attention, debate, and controversy. It is the subject of ongoing studies as a cultural model for dietary improvement and health promotion in the United States and Europe. Divided into three sections, the book provides this information: Background: Learn about the history of the Mediterranean Diet and food patterns from the ancient Greeks through the present. This section also discusses the diet's classical antecedents and definition, paying particular attention to the characteristics, dietary patterns, and epidemiological aspects. Dietary Constituents: Discover the specific food components and commodities that constitute the Mediterranean Diet such as fats and oils; fruits, vegetables, legumes, and grains; milk and dairy products; meat and meat products; and alcoholic beverages. Health Promotion and Disease Prevention: Examine how the Mediterranean Diet promotes good health with regard to diabetes and obesity, coronary heart disease, cancer, and longevity. Also included are chapters offering dietary recommendations based on the current understanding of the diet, suggested future research and applications, and a useful summary chapter. The Mediterranean Diet: Constituents and Health Promotion provides a clear overview of this timely and controversial subject.

Book Summary

Inulin and oligofructose are naturally occurring resistant carbohydrates that have a variety of uses as functional food ingredients. In addition to their role as prebiotics that selectively stimulate the growth of beneficial bacteria in the intestines, these inulin-type fructans act as dietary fiber in the digestive system and have applications as a sugar substitute and fat replacer. Written by one of the leading researchers in the field, Inulin-Type Fructans: Functional Food Ingredients describes inulin-type fructans and explains how they can be analyzed, quantified, and used in a wide variety of food products. The text evaluates the nutritional properties of inulin-type fructans, focusing on their behavior in the upper gastrointestinal tract that have led to their classification as dietary fiber and low calorie carbohydrates. Following a review of the selective and beneficial modification of the intestinal microflora that led to the discovery of prebiotics, the book concentrates on the relationship of inulin and oligofructose to lipid metabolism, carcinogenesis, mineral absorption, and the immune system. The text concludes with a general discussion of the classification of inulin-type fructans as functional food ingredients. Each chapter begins with background information on the physiology and biochemistry of the particular function covered as well as on the methodology used to assess these functions, and concludes with a summary of the results and perspectives on future development. The combination of authoritative research data and insightful perspectives provides a comprehensive overview of this growing field.

Book Summary

In the United States, people living in low-income neighborhoods frequently do not have access to affordable healthy food venues, such as supermarkets. Instead, those living in |food deserts| must rely on convenience stores and small neighborhood stores that offer few, if any, healthy food choices, such as fruits and vegetables. The Institute of Medicine (IOM) and National Research Council (NRC) convened a two-day workshop on January 26-27, 2009, to provide input into a Congressionally-mandated food deserts study by the U.S. Department of Agriculture's Economic Research Service. The workshop, summarized in this volume, provided a forum in which to discuss the public health effects of food deserts.

Book Summary

Internationally renowned dermatologist and research scientist Dr. Whitney Bowe presents, for the first time, the connection between a healthy gut and radiant, clear skin, with a 21-day program to maximize skin health and beauty. Every year, nearly 80 million Americans will consult their doctors about their skin. In fact, skin disorders beat out anxiety, depression, back pain, and diabetes as the number one reason Americans see their doctors. Unfortunately, however, the vast majority will receive only a surface-level treatment, leaving the underlying conditions at the root of their skin issues unresolved. Skin doesn't lie; it reflects overall health in unimaginable ways. In The Beauty of Dirty Skin, internationally renowned dermatologist and scientist Dr. Whitney Bowe shows readers that skin health is much more than skin deep. As a pioneering researcher on the cutting edge of the gut-brain-skin axis, she explains how the spectrum of skin disorders -- from stubborn acne and rosacea to psoriasis, eczema, and premature wrinkling -- are manifestations of irregularities rooted in the gut. Lasers, scalpels, creams, and prescription pads alone will not guarantee the consistently healthy, glowing skin we all seek. Instead, Dr. Bowe focuses on the microbiome -- where trillions of microbes |speak| to your skin via the brain -- and highlights the connection between sleep, stress, diet, gastrointestinal health, and the health of your skin. With simple explanations of the science, do-it-yourself practical skincare strategies, and a life-changing 21-day program, The Beauty of Dirty Skin is your roadmap to great skin from the inside out and the outside in.

Book Summary

The relationship between hospitals and the environment is defined by a glaring contradiction: as health care facilities deliver care at any cost, their environmental footprint -- pollution, waste production, unsustainable food services -- contributes to harming community health. Greening Health Care examines the intersections of health care and environmental health, both in terms of traditional failures and the revolution underway to fix them. Authored by one of the pioneers in health care's green movement, it presents practical solutions for health care organizations and clinicians to improve their environments and the health of their communities. Topics include: making food services sustainable, managing hospital waste, and relevant impacts/mitigating measures related to climate change. As environmental protection grows into an imperative for all aspects of society, Greening Health Care offers an historical and practical approach to sustainable health care delivery.

Book Summary

All animals need salt, but humans are the only animals that add extra salt to their food. The authors of this controversial book argue that the deliberate and often well-camouflaged addition of salt to processed foods has momentous health consequences, comparable to the well-documented risks of smoking tobacco. To equate salt consumption with smoking is a strong statement, but MacGregor and de Wardener provide a compelling and forceful account of complex issues relating to the perceptions of salt in society. The authors separate fact from fantasy and cast light on some of the hidden forces working to manipulate and exploit the consumer. The book presents what amounts to a scientific detective story that unravels with startling clarity the jumble of misinformation that has been concocted by the powerful vested interests of the multi- billion-dollar food industry. Along the way, the authors illuminate the rich history and mythology associated with salt, its symbolism, and its manifold socio-economic influences. The book is filled with an amusing and eclectic selection of historical and contemporary illustrations that lend context to this complex topic. Not only does this book have profound implications for the study of public health, but it also serves as an entertaining and instructive account of a part of our diet that is too easily taken for granted and ignored at our peril. Whether you agree or disagree with the authors, this will be fascinating and enlightening reading for all who are concerned with the mounting prevalence of salt in our diets.
